I say work on some outposts. You can can come home to this place and have new stuff to build every once in a while, but if you finish this place first you run into the problem that I often see in minecraft where you 'finish' your first build, and stop using it and never see it again.

Building in this world is so ambitious but if anyone can nail it you can, I’d love to see another biome too in the distant future when you’re satisfied with this one
I would build like a different types of timelines like prehistoric era for the Mesa and a like 13 colonies type thing for flower biome
I feel like the small room where the bay window is would be perfect for a little office above the warehouse. Put in a little desk, a couple of small bookshelves, and a single chest for filing. Inside the 'filing cabinet' you can keep logs of materials stored in your warehouse and where they are (ie, Row 1: Stone/Brickworks, Row 2: Woodworking [wood blocks, stairs, slabs, ect]) and so on and so forth.

U can put trap doors over the water in ur farm the water will still be under the trap doors and no seeds or wheat will fall Into the water

You need a stonemason villager for bricks. Maybe that other house on the docks can be the stonemason's house.
