use presets for superflats and click the overworld preset and boom ores and geodes and caves will spawn.

The new caves are absolutely amazing already, I'd be super happy with 1.17 if it were just this snapshot, tbh. Can't wait for actual cave biomes and the new mountain generation. I've already had so many cool new build ideas just by flying through a bunch of the new caves. Also the utter chaos of these open spaces where tons of mobs can spawn is kinda fun actually. It's been ages since I last had an early game scare due to a skeleton sniping me off from somewhere or what have you. You can't quite evade the mobs the same in these new caves.
