This DOES work on bedrock but you have to add observers on top of the growing space instead and from redstone wiring and from redstone torches connect it to a pre-activated piston under the growing space and i know-i know it does come in the way of the minecart, to fix that you have to put rails around the piston so it will work 🙂
ill explain how it works on bedrock: because in bedrock pumpkins cannot be placed above air
I can confirm that this design does work on bedrock edition. It used to not work because observers wouldn’t detect the plant stems turning, but now they do (as of 1.16)

Hey wattles, I know a way to use your seeds better. You might know this, but when you shear a pumpkin it actually drops some seeds. Having the carved pumpkins with anted of losing them through crafting means more jack o lanterns

Instead of this much water u can keep a waterlogged slab in the middle and u have a 9 by 9 space using only 1 water bucket
