I like the roof change from pink to purple, that does fit better, and the school looks amazing. Going to normal or even easy mode is good, you will also have fewer hostile mobs spawning.
I will differ from the other commenters and say that I don't think the hobbit hole fits in with the village. I know the story is that the butcher is a hobbit but that feels like a stretch. IMO instead of a circle, the doorway should fit the motif of the other buildings, straight sides partway up, then a pointy arch shaped top, and instead of an all brown wood facade, it should incorporate one of the roof theme colors.
I have a weird fear of wolfs and dogs in Minecraft so when the wolf popped up it scared the live out of me

You will want to add a craft table per butcher in the butchery if you want them to produce leather armor for trading. With no more animals than you have even two butchers will have downtime after slaughtering animals.

I would be fine if you change the difficulty to normal.
I like how this village is coming along especially with how many little things you put in that don't need to be there. For example, I still think a sword in the stone is a good idea but will require a lot of materials.

try just putting white terracotta for the schools board as a white board, i think that makes more sense than the paintings (unless its supposed to be a TV)
