No, you didn't place down a bed or lure them out into the ocean. Unfortunately even on 1.19, the Villagers (Nitwit, Unemployed, and Employed) have something called "wandering" built into their scheduling for the day. (Edit after finishing the video, I wanted to add that your build is amazing, I'm in awe of how talented of a builder you are, and I enjoy your content a lot. Thank you for uploading as often as you do and I hope I can catch a stream live soon.) ((Edit to my edit lol If you want some more texture on the ground around your village? Stone buttons for pebbles/rocks! I do it all the time in more "outdoorsy" builds and it really adds character like you do on buildings.))

"All villagers wander from time to time, but for the unemployed and nitwits, they wander for the majority of their day. A wandering villager chooses a random block and walks toward it, then stands there for a variable amount of time before wandering again."
and "The wander schedule includes a job-specific goal called "exploring the outskirts" that causes villagers to wander near the edges of the village. This enables them to detect new beds, job site blocks, bells, and houses that players have used to extend the village. During this time of the day, they may also share items."
"Late in the day, adult villagers gather at a meeting place (the area around a bell). When two villagers encounter one another, they mingle (look at each other and "converse" by humming at other villagers). They may also share food, or breed if both are willing. If a villager isn't close enough to detect a bell, it wanders randomly, searching for one."
So it could be either wandering or gathering programming that's making them do that. The only way, sadly, to prevent it would be to absolutely block their paths (i.e. completely ruining that beautiful beach you've worked so hard on) or encourage all of the villagers into penned in houses you've been making for job blocks and stop letting them roam free in the village.
This world is insane..! I’ve never seen anybody actually make Minecraft so alive. All the people, the animals, if feels open and alive. Like an actual city . Love the show !
I love how he doesn’t confine his villagers even though they’re kinda a nuisance. Every Minecraft YouTuber I see just puts them locked in these tiny boxes. I’ve always build my villagers houses lol.

you can add some cactus in there 
Not just shady dirt/grass, you can also plant mushrooms and grow them tall on podzol, which is way easier to get than mycelium.

I had an idea that you could add if you want to of course, a cartography trading hall/house!
With that you can add not only cartographer villagers to do trades but also maybe a Map room with a map of your whole village! I think it would look really nice seeing how your village would look every new wpisode on the map
