Most gigantic lush cave (it seems endless) that I've seen is near the spawn point with seed 1136481950. You spawn in a desert village. Look for vegetation, fly toward it, you'll see a hole in the ground, that's the entrance. It seems like a good seed for survival – there's a savanna village to the west and an outpost a bit further.
I found a lush cave. Massive. And ceiling is so high up that glowberry lights don't reach the ground. So it's dark. Also it has massive flat area. You'll have a spooky wetland vibe, filled with mobs until you light up everything.
I'm writing down the seed.
