Yea diamonds are a lot rarer on bedrock
In Bedrock you can just right click in the recipe book to craft once and shift left click to craft up to a stack.
Additional tips: After placing two blocks in a line, hold right click to continuously place blocks along the line as long as you are looking at the place the block should go.
You can place blocks in front of other blocks, up in the air, if you aim over the edge of the initial block.
