Dolphins need both air and water.
If they stay in the water for longer than 5 minutes, they die.
If they stay in the air for 5 minutes, they die.
You also need to be near them, or they will they from both of those.
Good choice not picking to put dolphins there, you could've start a big genocide.

I think it would be really cool if you replaced the whole ceiling with sculk! In the ancient city !! It might look really cool! Who knows ?
Also for the dolphin you just need to make a water slide for them to get down in pretty sure you can put them on leads. I think fwhip did it if I’m not mistaken
An idea to get dolphins and other sea life down there: dig a trench from the top, and boat over the dolphins.

I've watched every episode on your channels (except 80% of the long plays, sorry), and I think this is one of my favorite builds if not the favorite. It's so colorful and the whole idea of it being inside an Ancient City and not just some random place in the overworld. I am happy you went with the tropical fish, they are so colorful and fit the colorful vibe of the aquarium. I think with the amount of coral blocks you put in, the dolphins would have been too crammed there. I mean, the whole restoration of the Ancient City is just amazing but the crown piece is definitely this Aquarium. Maybe in the future you could do the end portal room and eventually the main End Island? I would love to see you tackle the End Island.
