My theory is that blazes used to defend the fortress against the wither that was mistakenly created by the ancient builders,by sadly,some of the player defenders was shot by the wither causing them to turn to withered skeletons.
My theory is that the ancient builders tried to revive their dead relatives by putting skulls on fire into the spawners (also my theory about spawners is that when you put the heart of of an organism inside the cage, the organism will infinitely respawn) and when they did the blaze came out. I added a bit to my headcannon when i saw Wifies' video from a few days ago: when the ancient builders saw what the blaze are, they were curious to see what their rods do, and after realising it can help in magic, they started farming the blaze like animals, exploiting their rods. After the ancient builders left into the end, the blazes took over the fortressesand proclaimed them as their own, besides the withered skeletons of the ancient builders

For my theory they are not machines in fact as dragonic said that they are fire demons which means they are summoned by ancient builders to protect the fortress and the crew in the end that evolve into ender was given a punishment after they entered and turn them into ender man and give them teleporting power and after you kill the enderdragon you'll get the advancement "Free the end" which means the ender dragon was still following the order who punished the crew.

The blaze sounds like when it made that ventilation noise like Darth Vader (or Anakin) when he breaths
my theory is that blazes are not machines, they are trapped souls similar to the ghasts and the ventilation sounds like someone breathing inside a magnetic metal box struggling. Hence magnetism they are able to fly with the rods. since the rods are magnets that's why when you as the player combine blaze powder with the ender pearls they follow the poral.
the blaze rods fused with the eye of enders might be too powerful so you just need to sprinkle a bit
i think the orbiting rods are like that lamp that uses magnets to float in air

I know why blazes attack players. It might I’ve been different clans fighting against each-other. And the clan that built the fortress has some kind of Identity card or something else. Probably that red crystal on the mob d’s head.

Something weird about blaze
The blazes are not robots they are souls trapped in a blazing prison with rods consiling it trapping the soul and when you the player kill the the blaze soul will be free….
I think that the blaze are the souls of the ancient builders locked inside of the rods forced to respawn forever cuz getting rods give u the achievement into the fire and its description is to relieve a blaze of its rod meaning freeing from its rods that are locking it and the metallic breathing is like a human breathing in a tight metal chamber and they attack u cuz ancient builders are ur ancestors and the builders locked the souls of the dead in a cruel cycle
