All of this works . But where did the two flowers come from they (according to this theory) come from nether . Therefore i think that it would have made more sense to say the desert tribe bringed those flower with them and showed them to the fishermens which then discovered the healing abilities of those two specefily and kept them . But you would have to make an excuse to why snifers dig them up. I will think about it and edit this comment, adding anything that I fingure out.

Yknow it kinda makes sense why an old realm/server I was apart of went into despair when the sniffer died(this was nearly a year ago I think)
The striders actually kind of look like a mutated version of axolotls. If you look at the sides of their heads they both have frills, and both are able to survive on land and in their own environments liquids. Those are really the only things I could think of that can connect the two, but it is I suppose worth looking into.
"What is the sniffer?" It's a useless mob that only digs up decorative plant seeds, of which the only use outside of decoration are expensive dyes that can be readily made with other plants. It's big, it's slow, it's NOISY, and it's otherwise the most worthless mob in MC's history. The only reason to even get it is for the TAME AND BREED EVERY ANIMAL achievement. After that they have no use.
Great theory though.
It makes sense if Sniffers are from (atleast according to orevious theories) lived in the ice age nether
Because when you think about it, Sniffers are very furry creatures, it's a key part of their design.
I propose a theory that since the ancient tribes went to the nether and destroyed it's eco system, the sniffers because of the warmer climate begins to die one by one because of their already thick fur that gives them warmth
I think the Ancient Builders tried to save as many Sniffers as they can because of how beneficial these creatures are to them
